Gato Blanco is listed among the establishments reviewed by ACECOVA, the Coeliac Association of the Valencian Community, under its Moments Sense Gluten programme. ACECOVA is part of FACE, the national federation, and works with more than 100 establishments across the region.
It isn’t a rubber stamp. The review covers the premises, the food on offer and training for every member of staff.
The menu came out of two families and the places they’ve passed through. There are dishes from Chile, Turkey, Mexico, Argentina, Ukraine, Venezuela and Spain, and every one of them comes out of the same 100% gluten-free kitchen.
To give you an idea: Turkish menemen with egg and peppers, guacamole and a taco bowl, chicken and beef milanesas, salmorejo, secreto ibérico, hummus and corn ribs. The crêpes, with their coloured batter, are made right here.
In the morning we run as a café: toast, sandwiches, a full American breakfast and speciality coffees, all of it gluten-free. Which in Valencia is exactly the hardest thing to find when you’re coeliac and all you want is a quiet breakfast. There’s lactose-free, soya and coconut milk.
In the afternoon, a gluten-free bar: small plates, wines from Valencia and Utiel-Requena, and gluten-free Mahou 5 Estrellas. The 0.0 is gluten-free too.
Among Valencia’s gluten-free cafés and bars there aren’t many where you can order blind. That’s the place we set out to build.
